Cooking With Diabetes
Our guest speaker, Meredith Henry is the County Extension Agent, Family and Consumer Science, for the Walker County Extension Office. Her presentation was fun and informative.
Meredith brought all the equipment and supplies to cook a Mexican Bake Casserole entrée, and a Poppy Seed Cake dessert. As she cooked, stirred and chopped, she entertained with interesting stories about herself and family. Do you know that Meredith refuses to measure anything (except baking powder) - the end result is that each time she cooks a dish, it turns out different!
Everyone got to sample her Mexican bake and poppy seed cake and every single person loved how it tasted! She makes being diabetic and requiring a special diet seem ‘not so bad’.

Discussing sugars, carbs, the difference between the ADA Carb counting method and the Glycemic Index good/bad carb theory. I love these discussions because lifelong diabetics can benefit from these discussions as well as newly diagnosed diabetics. Everyone has so much information to share and helped each other tremendously!
